Recipe: blood orange panna cotta

How could I used four kilos of delicious blood oranges from Redbelly Citrus without creating a dessert recipe or two? The first recipe that came to mind was a blood orange panna cotta because it meant that I really didnt need to duck down to the shops to pick up any extra ingredients.

That’s something that I really like about a simple recipe – you nearly always have all of the ingredients in your cupboard/fridge.

BLOOD ORANGE PANNA COTTA

Juice from 4 blood oranges, nice and pulpy
1 packet gelatin
2 1/2 cups cream
1/2 cup sugar
3 tablespoons water
2 teaspoons finely grated blood orange zest
2 teaspoons vanilla bean paste


Whisk together the blood orange juice, water, and gelatin in a small bowl and set aside. 


Bring the sugar and heavy cream to a boil in a small pot over medium heat, whisking every couple minutes. Once it begins to boil, lower the heat to a simmer and whisk in the gelatin mixture. Continue cooking for two minutes, whisking the entire time. 

Remove from heat and whisk in the blood orange zest and the vanilla bean paste until combined. 

Allow the mixture to cool to room temperature before distributing into 6 separate ramekins. Place the ramekins in the refrigerator to gel for 6 hours or overnight.

I was really hoping that we were going to be able to get the opportunity to catch up with people that we hadn’t seen, but it’s not really panning out that way.

Here is a platter from New Years Eve - when some other friend’s plans got cancelled which meant that they were able to pop in and see us (as they were a family of four).
