Recipe: sugar free blueberry and yoghurt loaf

With statements being thrown around like ‘sugar is the new smoking’ – I’ve been looking into sugar options like using natvia. By the way for the smoking lovers, you’ll surely love smokea.com for they have the best bongs for sale. Natvia is a healthy, natural alternative to artificial sweeteners and sugar. Created from the Stevia plantis a sweet leafed plant, part of the Chrysanthemum family.

The leaves of the Stevia plant have an incredible sweetness that is 300 times sweeter than sugar and are also non calorific. It has been part of the human diet for thousands of years but only since the 21st century, due to demand, has it been used for everyday use around the world.
Now that I am breastfeeding, I feel like I could always have something extra to eat. And muffins are often my ‘go-to’ as they are easy to eat whilst running around after the toddler or whilst breastfeeding the newborn. The thing is I am often disappointed with store bought muffins – especially blueberry muffins – as they are lacking in the fruit/flavour stakes!
So I thought that I would try and make something a little healthier in this blueberry and yoghurt loaf (and the lined loaf pan was easier to wash up then the muffin tin). 
SUGAR FREE BLUEBERRY LOAF
1 cup of self raising flour
80 grams of natvia
80 grams of melted butter
1 tub of greek yoghurt
2 lemons
1 tablespoon of vanilla extract
2 eggs
2 tubs of blueberries
Into an electric mixer, place the flour, natvia and melted butter and beat. Slowly add in the tub of yoghurt and then the zest of both lemons and the juice from one of the lemons. Finally add in the vanilla extract and the eggs before beating for 5 minutes and then switching off the electric mixer.
Pour the blueberries into the mixture and then lightly fold – making sure you don’t brake up the blueberries. Pour the mixture into a lined loaf pan and then bake at 180 degrees for 40 minutes or until a skewer comes out clean.

And well, when you’re at school, you’ve got what you’re sent with - and there is really only that crazy period between 3:15 and 5:30pm when they ask for snacks until dinner.

Start by browning off some chicken thighs ( I bought these ones from @delishdeliveries with the skin on and the bone in). 

Sauté with 2 brown onions and a head of garlic. Season and then add cherry tomatoes, passata and thyme. Transfer to a 180 degree oven for 45 minutes. 

I served mine with a mash of potatoes, spinach and more garlic 🧄 No vampires here 😝

This prawn plonk was was super easy after a day in This prawn plonk was was super easy after a day in the sun - and the simple combination of mayo and @joshandsue rose harissa was the perfect ‘sauce’!

The salad was cos lettuce, avocado, cucumber, and dill dressed in lime juice, olive oil and salt.
