Recipe: pork with pear and apple salad

What happened to my toddler who ate everything? At seems like some days he doesn’t want to eat anything – so there is no point in cooking up a whole range of veggies for them to be thrown in the bin {and God knows, my husband isn’t adverse to turning his nose up at the veggie component of the dinner}. So tonight, I did some roast potatoes and made a fruit salad!

As a Mum it can be extremely frustrating to throw out dinners that you have slaved away at over a hot stove {especially seeing as it has been so hot lately in Canberra}. If my husband asks one more time ‘why did you make this?’ I think I might explode.
Why did I make a nutrious dinner for our family from scratch? Because I love you!
… Oh and I didn’t want to eat spaghetti bologenese five nights a week.
So tonight I roasted potatoes and made this delicious apple and pear salad to go with our pork and everyone ate it and was happy. Dinner success!
PORK WITH PEAR AND APPLE SALAD
600 grams of pork tenderloin
1 green apple
1 red apple
1 pear
1/4 cup of lemon juice
1/4 cup of apple cider vinegar
1/4 cup of olive oil
2 tablespoons of parsley
1 teaspoon of dried chilli flakes
1 teaspoon of paprika
salt and pepper
Chop your apples and pear into similar size cubes. Toss with lemon juice, vinegar, oil, parsley and chili. Set aside.
Slice your tenderloin into pieces {as shown below}, season with paprika, salt and pepper and then cook in a hot pan for 3 minutes each side. 
Serve together with some roasted potatoes for a meal that will go down extremely well.

Family meals for my tribe of 6
Sometimes it’s all a bit overwhelming being a mu Sometimes it’s all a bit overwhelming being a mum of four and working full time.

Sometimes you wonder if you’re doing a good enough job.

Sometimes you wonder if you’re giving everyone everything that they need - even if you’re running on empty.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉
Baked feta pasta from #tiktok fame... I did my re Baked feta pasta from #tiktok fame...

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
