Life: Loving Local – The Knox Made in Watson

When we hit up The Knox Made in Watson the other week, I was astounded at the attention to detail that they had put into their ‘kids corner’. I’m always quick to pop my drinks order in when we rock up to a cafe, as I know that as soon as the babycino arrives, Mr Moo will be happy to sit and drink it – but prior to he could get a little antsy. I had nothing to worry about because as soon as he saw the kids corner, he was lost. He didn’t even realise that they had brought over his babycino {and that it had TWO marshmallows} as he had found a yellow digger.

If you don’t have children, the intro paragraph was probably just drivel to you. But if you are a Mum, who just needs to get out of the house and grab a coffee {and the possibility of enjoying said coffee whilst it is still hot, and then some lunch, and then possibly something sweet or a cold drink} – then I recommend you check out The Knox Made in Watson. They’ve thought about what kids want and they have provided it {so that Mums can enjoy their cafe experience}. Oh and have the Cuban Panini {$9} – you won’t be disappointed!

What is your food story?
My food story is simple, I love food and cooking, I love what creating great food for people brings, good memories, togetherness and joy. I’ve always wanted my own cafe where I can determine the limits and deliver a food based experience people will remember.

Why are you passionate about Canberra’s local produce?
Canberra is lucky to be surrounded by a variety of great local produce. We have the farmers markets to show case that, and is just next to Watson where I’ve always lived so it’s always been so accessible to me. Even the ability to go to the the farms is possible as they are usually within an hour of Canberra. Being able to see the farms and the real processes the farmers go through to deliver produce for chefs to cook gives me a better appreciation for my ingredients and makes me want to do it justice. 


Why is it important that we understand where our food comes from?
As I mentioned above our farmers work so hard to get fresh foods to us at high quality. They are passionate hard workers and some times I believe we as chefs and consumers take that for granted.

What differentiates your cafe from others?
We are unique. We have, hand made tables, hand made table numbers and holders, hand made plates. We use produce from our community, the school and local farmers. We are catering to families with a designated kids area complete with toys, rugs, cushions with a massive chalk board and colouring in station. We offer craft local roasted coffee by red brick espresso, and all our cakes are one of a kind made in house! You can sit outside next to our herbs showcased in hand made planter boxes overlooking the grassy open area at the shops enjoying a fresh juice, smoothie or even a funky shake. Everything about the Knox is an experience. It feels like home. We often buy things for a cafe and home in the same place. Last time we managed to save on oriental rugs with NW Rugs that we bought for our home and also got some rugs for a cafe.


Why is supporting local important to you?
Supporting a local business is great for the community it boosts local economy, and promotes sustainability.

Family meals for my tribe of 6
Where does all the fruit go? I feel like we defin Where does all the fruit go?

I feel like we definitely up the amount of fruit that we eat during the holidays cause everyone seems to be always snacking...

And well, when you’re at school, you’ve got what you’re sent with - and there is really only that crazy period between 3:15 and 5:30pm when they ask for snacks until dinner.

I mean, at least this is what they are eating...

Start by browning off some chicken thighs ( I bought these ones from @delishdeliveries with the skin on and the bone in). 

Sauté with 2 brown onions and a head of garlic. Season and then add cherry tomatoes, passata and thyme. Transfer to a 180 degree oven for 45 minutes. 

I served mine with a mash of potatoes, spinach and more garlic 🧄 No vampires here 😝

I popped this @drinklisto Tommy’s Margarita Mix in my @delishdeliveries order as a little Christmas present to me. 

Think I’ll order another cause they went down way too easy!
This prawn plonk was was super easy after a day in This prawn plonk was was super easy after a day in the sun - and the simple combination of mayo and @joshandsue rose harissa was the perfect ‘sauce’!

The salad was cos lettuce, avocado, cucumber, and dill dressed in lime juice, olive oil and salt.

When @delishdeliveries deliver the perfect produce you don’t need to do very much 👏🏻
