Recipe: White chocolate panna cotta with berries

This is another great dessert recipe that is perfect for Christmas. Now I posted about these white chocolate panna cotta with berries on Blogger, but for some reason the post didn’t transfer across to WordPress – and seeing it was popular, I thought that I would share it again today.

Have you ever just met someone and hit it off from the moment you met? I think it’s really rare to have this ‘instantaneous friendship’ in a world where so much more people are just looking out for themselves. But it happened to me last week {which was actually almost 5 years ago now}.

We had invited some friends over for dinner mid-week {as we had struggled to find a free weekend}. Two couples pulled out and so we were left with Chris, Phillip’s friend from school Pat and his wife Maria. From the time that Maria walked in the door until 1am when Pat dragged her out the front door, we had not stopped talking or more importantly LAUGHING.

Our evening was like chicken soup for the soul – we shared stories and experiences that I hadn’t talked to some of my closest friends about. We even decided to enrol in a CITACE course together the next day, so that we could both do something we had been thinking about and catch up on a regular basis!

Maria brought a beautiful dessert around that night and I wanted to share my version of it with you.

Recipe: White chocolate panna cotta with berries
Ingredients
  • 275 grams white chocolate
  • 600mls pure cream
  • 1/3 caster sugar
  • 1 tsp vanilla extract
  • 2 tbsp boiling water
  • 2 tsp gelatine
  • 250 grams plain Greek-style yoghurt
  • 450grams frozen mixed berries
  • 1/3 caster sugar
  • 1/4 boiling water
Instructions
  1. Combine chocolate, cream, sugar and vanilla in a saucepan over low heat. Cook, stirring, for 5 minutes until the chocolate melts and the mixture is smooth.
  2. Pour boiling water into a cup, sprinkle in gelatine and use a fork to whisk until dissolved. Set aside to cool slightly, before adding into the cream mixture. Stir to combine and set aside for 15 minutes to cool. Whisk in the yoghurt and then pour into 200ml glasses. Cover with plastic wrap and refrigerate for 6 hours or until set.
  3. Into a small saucepan, place the berries, boiling water, and sugar. Let the mixture continue to boil, whilst stirring for 2-3 minutes. Allow to cool before pouring into a container and refrigerating.
  4. To serve, top the panna cotta with compote.

Poke bowl magic 🪄 The boys have been smashing Poke bowl magic 🪄 

The boys have been smashing these poke bowls - sushi rice topped with grated carrot, baby cucumbers, quick pickled red onion, edamame, salmon sashimi, mayo, teriyaki sauce, beneto flakes, seaweed, sesame seeds.

The salmon sashimi from @delishdeliveries was next level good this week - so soft it melted in your mouth.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
