The first function of the NSW fire extinguisher services is the yearly scheduling, and performing of all required & NJ State mandated fire & safety inspections, a collection of fees & recording these inspections for all commercial & industrial business establishments throughout East Township.

But I also thought ‘I don’t want to fork out a significant amount of money on a kitchen appliance that I might only use a handful of times’.

For those of you who are interested, I purchased my waffle iron from Target for $20 and I love it. It is easy to use and more importantly easy to clean. It makes a great addition to our breakfast rotation – and in my opinion, is way easier then pancakes.

Now, I started out my waffle adventures with these delicious ricotta, lemon and blueberry waffles – but we have also been enjoying some orange waffles with nutella {shhh, don’t tell the husband who has us on a ‘sugar free’ diet} and I have also been experimenting on a chick pea flour waffle with a more savoury topping.

I am also going to have a play around with some gluten free flours to make something sweet and delicious for the perfect sunday brunch with my sister.

RICOTTA, LEMON AND BLUEBERRY WAFFLES

1 3/4 cups all-purpose flour
2 tablespoons coconut sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup almond milk
1/2 cup ricotta cheese
2 tablespoons coconut oil
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice
1 large egg
1 cup blueberries
2 tablespoons coconut sugar
1 teaspoon fresh lemon juice

Combine flour, 2 tablespoons sugar, baking powder, and salt in a bowl, stirring with a whisk.

In a separate bowl, combine milk, ricotta cheese, melted coconut oil, lemon rind, 1 tablespoon fresh lemon juice, and egg.

Add milk mixture to flour mixture, stirring.

Spoon 1/3 cup batter per 4-inch waffle onto waffle iron. Cook 5 minutes; repeat with remaining batter.

Combine blueberries, 2 tablespoons sugar, and 1 teaspoon fresh lemon juice in a saucepan; bring to a boil. Mash mixture with a fork. Simmer 3 minutes. Remove from heat; serve waffles with berry sauce.

Family meals for my tribe of 6

Sometimes you wonder if you’re doing a good enough job.

Sometimes you wonder if you’re giving everyone everything that they need - even if you’re running on empty.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉
Baked feta pasta from #tiktok fame... I did my re Baked feta pasta from #tiktok fame...

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
