Recipe: Mexican Soup

We have been very blessed on our journey to be parents. I fell pregnant with Mr Moo on our honeymoon. Had one period before falling pregnant with the Little Dude 9 months after Mr Moo was born. Had two periods before falling pregnant with Z man 12 months after the Little Dude was born. And finally, falling pregnant with Buddy Boy without even trying.

This is definitely not a story that everyone has – many of our friends have had issues falling pregnant or carrying to term. But they are not my stories to tell.

Over a warm bowl of this delicious Mexican soup we have heard those stories of heart ache. And soon after, friends have had positive stories to share. I’m not saying that this soup is the reason why, but a few of our friends have joking named it ‘fertility soup’*.

So, to another friend who is on the fertility roller coaster – know that I am thinking of you and sending you lots of positive pregnancy vibes and here is the recipe for my ‘fertility soup’.

Recipe: Mexican soup

  • 4 capsicums
  • 2 red onion
  • 1 zucchini
  • 1 carrot
  • 1 can of black beans
  • 1 can of corn
  • 2 can of diced tomatoes
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander seeds
  • 1 tbsp dried oregano
  • 1 tsp cayenne pepper
  • 1 jalapeno
  • 3 cloves of garlic
  • 2 liters of veggie stock
  • 2 avocados
  • 2 tomatoes
  • 1/2 bunch of spring onions
  • 1 lime
  • 1 bunch of coriander
  • sour cream
  • corn chips
  • olive oil
  • salt

Heat a drizzle of olive oil in a large soup pot. Add in the diced capsicum, red onion, jalapeno, garlic and salt. Cook for 5 minutes or until the onion is translucent.

Add in the spices (cumin, coriander, oregano, ceyanne). Cook for 60 seconds before adding the canned tomatoes, beans, corn, zucchini, carrot and stock. Bring to the boil and then simmer for 30 minutes.

Whilst that is cooking, dice the avocados, tomatoes, spring onions and coriander stems. Toss in lime juice, a drizzle of olive oil and salt. Set aside.

To serve, ladle a couple of scoops of soup into a bowl. Add a spoonful of sour cream and then top with the fresh salsa. Serve along side the extra sour cream, salsa and corn chips.

Family meals for my tribe of 6
