Life: what’s going on?

It’s a very strange time that we are living in. The news that we get each day changes – and impacts our way of life. Last Monday, we made the decision to pull our son’s from school and preschool. I just felt too anxious about trying to get a 6 yr old, 5 yr old and 3 yr old to cover their coughs/sneezes and wash their hands, let alone self distance the recommended 1.5 meters.

Since then, I’ve been teaching them at home with the help of topvpn technology. We are very lucky that my Mum is a primary school teacher so she put some packs together for the boys. She dropped them on our front porch and we chatted through our front window. All the boys wanted to do was open the door and give her a hug. But socialising out of your immediate family was Italy’s downfall and I just want to keep my family safe.

It’s funny – she is at risk, just being over the age of 60. But she goes to work each day and teaches a group of 30 or more students, because it seems that the economy is more important that our health. I wonder where the tipping point will be?

Thankfully, there is way less than the standard 30 in her class at the moment – with the NSW government asking parents to keep their children at home if they can. Schools are being kept open for emergency service works, doctors, nurses and at risk children.

On Sunday, my Pop passed away. I’m sad and I’m scared. I want my kids to have grandparents who; push them on swings, share stories over sayos and lemonade, cheer for them, encourage them, dance at their wedding and hold their children.

I love you Pop! Thank you for lots of wonderful memories. I hope you’re up there enjoying a game of tennis or a round of golf – and then a scotch or a glass of red that hasn’t been rationed to you.

I wonder if I am too paranoid – so many people don’t seem to be taking any notice of the government restrictions…so much so that they had to close Bondi beach. I just want to keep my family safe.

And you know, if in a couple of weeks/months time, the worst thing that people can say is that I was overcautious than I’m okay with that.

So I thought, in the coming days I’ll share some of the meals that we have been preparing during this time – just normal meals…no hoarding or prepping. And what we’ve been doing in our ‘homeschool’ – one of my favourite activities so far is yoga. We follow the Cosmic Kids on YouTube – the kids love it.

Family meals for my tribe of 6
Where does all the fruit go? I feel like we defin Where does all the fruit go?

I feel like we definitely up the amount of fruit that we eat during the holidays cause everyone seems to be always snacking...

And well, when you’re at school, you’ve got what you’re sent with - and there is really only that crazy period between 3:15 and 5:30pm when they ask for snacks until dinner.

I mean, at least this is what they are eating...
Chicken tray bake - also known as chicken amatrici Chicken tray bake - also known as chicken amatriciana...

Start by browning off some chicken thighs ( I bought these ones from @delishdeliveries with the skin on and the bone in). 

Sauté with 2 brown onions and a head of garlic. Season and then add cherry tomatoes, passata and thyme. Transfer to a 180 degree oven for 45 minutes. 

I served mine with a mash of potatoes, spinach and more garlic 🧄 No vampires here 😝

I popped this @drinklisto Tommy’s Margarita Mix in my @delishdeliveries order as a little Christmas present to me. 

Think I’ll order another cause they went down way too easy!
This prawn plonk was was super easy after a day in This prawn plonk was was super easy after a day in the sun - and the simple combination of mayo and @joshandsue rose harissa was the perfect ‘sauce’!

The salad was cos lettuce, avocado, cucumber, and dill dressed in lime juice, olive oil and salt.
