Peanut beef stir fry

Some times, even with the best of plans, it’s a little difficult to get a meal on the table at the end of the day with a baby. But I’ve got a few tricks and tips to help you out to keep husband and baby happy at meal time.

I really think that it helps to be prepared. Not only can you make a meal plan at the start of the week – so you know what you’re cooking and you can have all the ingredients ready and in your pantry, but you can get everything ready whilst your baby is napping.

And then once your items are prepped, choose to cook something that is super quick like a stir fry. This stir fry is super quick and easy – with all the prep done, it has a maximum of 15 minute cook time (you like that Jamie Oliver) and it is sure to keep your baby and your husband happy.
PEANUT BEEF STIR FRY
600 grams of steak, thinly sliced
2 bunches of brocollini
2 spring onions
2 cloves of garlic, thinly sliced
1/2 bunch of basil leaves
1 cup of salted peanuts
1 can of coconut milk
1 tablespoon of soy sauce
1 teaspoon of fish sauce
1 teaspoon of brown sugar
1 teaspoon of lime juice
1 tablespoon of olive oil
sea salt and cracked black pepper
Mix together the coconut milk, soy sauce, fish sauce, brown sugar and lime juice.
Heat up the oil in a wok, stir fry the seasoned beef in two batches so it doesn’t got soggy. Once browned, remove from the wok and add the brocollini, spring onions and garlic. After two minutes add the sauce and peanuts, place the lid on the wok and steam the veggies for 8 minutes.
Add the beef back into the wok, toss and serve.
