Recipe: Christmas stuffing cups

I love Christmas and traditions… but I also love trying new things or putting a fun and playful twist on some of our old favourites. And who doesn’t love a little bit of stuffing? Aren’t this make you excited? It makes me feel like I’m winning at top10slotgames.com, and I loved it! I saw that Donna Hay had created some wonderful looking stuffing cups for her Christmas edition of her magazine – so I thought that I would play around with some flavours and create some for our Christmas dinner with friends.

These were a hit! I was asked for the recipe by a few of the ladies who are going to whip these up for Christmas Day. I’ll be at my inlaws on Christmas Day so we will probably be eating more traditional Croatian Christmas fare so I am glad I got to try them the other night.

STUFFING CUPS
18 slices of pancetta
5 cups of fresh breadcrumbs
1 cup of dried cranberries
1 egg
120 grams of unsalted butter
2 tablespoons torn sage
2 tablespoons thyme
2 cloves of garlic
1/4 cup of pistachios
1 piece of lemon zest
cracked black pepper
Preheat oven to 160 degrees. Line a muffin tray with pancetta rounds (12 rounds – I use the extra pancetta in the stuffing mixture). Place all the remaining ingredients in a food processor and blitz until combined. Spoon the bread mixture into the pancetta rounds and bake for 15 minutes or until golden and crunchy.
