So all the presents have been unwrapped, and all the Christmas crackers have been popped, and all the guests have left … And you’re sick of seeing that turkey meat in your fridge because you couldn’t bare another roast turkey sandwich – well, read on because this post is for you.
So the three wise men have shown up and you’re still left with some turkey meat. You spent so much money on all the food for the big day that you don’t want to throw it out – and nor should you.
Let me help you take this turkey meat to a completely different flavour profile (so it doesn’t feel like you’re eating leftovers again) and to make it even better, you’ll find all of these items in your fridge or pantry so you might not even have to leave the house!
Our Christmas is pretty traditional, so I thought that I’d take this turkey on a little trip to Italy. In saying that, if you are Italian and you ate Italian for Christmas lunch this might not be up your alley (but then again you might not have any leftover turkey in the first place).
LEFTOVER TURKEY ITALIAN PASTA
1 packet of pasta (of your preference)
2 tablespoons of pesto
1/4 cup of cream
1/4 cup of antipasto
2 cups of turkey meat
Sea salt
Boil your pasta in salty water as per the instructions on the packet. Drain the pasta, but keep about half a cup of cooking water to help the sauce stick to the pasta. Return the pasta to the pot and add the pesto, cream, antipasto and turkey meat. Stir adding the cooking water until the sauce is thick and the additions have been heated through.
This was delicious hot, but also good cold the next day as a pasta salad.
