Some times I am so focused on getting breakfast ready for Mr Moo that I forget about myself. I am busy making him cereal, preparing fruit, feeding him yoghurt and giving him toast, that I have a half a slice of toast and three sips of juice and then I am onto the next task.
But this is bad – naughty mummy! I need to focus on making myself something healthy and delicious for breakfast that will give me the energy to run around after my little man.
This breaky is good for me and I am also able to give elements to Mr Moo – which he quiet enjoys.
BUSY MUM BREAKY
2 slices of soy and linseed bread
2 tablespoons of ricotta
1 tablespoon of honey
1 handful of walnuts
1/2 a green apple
Toast your bread, top with ricotta, honey and crushed walnuts. Thinly slice the apple and place on top of the toast. Simple.
