Recipe: Fetta stuffed pork on your fork

I was watching Jamie Oliver the other night and he did a fetta stuffed pork recipe in his 15 minute meals. He also showed how to turn microwave rice into something that could be eatable. Shame after all the effort that I put in, my husband still left the majority of the meal (as he refued to eat the zucchini or the rice). So to those who would actually like to praise me for all the effort I put into cooking delish dinners with a 10 month old – you are more than welcome to come around and eat my husband’s dinners each night before he comes home!

This meal was delicious and I was able to fed Mr Moo the rice component and he fed himself the zucchini component (I just made sure that there wasnt any chilli on the pieces that I gave him).
FETTA STUFFED PORK AND CHILLI ZUCCHINI
500 grams of pork fillet
100 grams of fetta
4 slices of proscutto
8 – 10 sage leaves
4 medium zucchini
1/2 bunch of mint
1 lemon
1 red chilli
1 bag of microwave brown rice
2 tablespoons of sun dried tomato paste
olive oil
sea salt and black pepper
Cut the pork fillet in half and then in half again. Make a cut into the middle of each pork medallion and then place a small amount of fetta into each slit. Wrap each piece of pork in a slice of proscutto and then place in a medium frying pan which was on the heat.
Slice your zucchini and place in another frying pan with a drizzle of oil. Add the chopped mint and chili to the zucchini, along with some lemon zest and season with salt and pepper.
Once the pork is brown on one side, flip and add some sage leaves into the pan to crisp up.
Remove the zucchinis from the pan before they start to colour. Add the microwave rice into the pan, along with 2 tablespoons of boiling water, the sundried tomato paste and the juice of the lemon. Stir and allow to cook for 2 minutes.
When serving crumble any remaining fetta over the rice…YUMMO!
