Recipe: creamy pesto chicken with gnocchi

I love the word Gnocchi. I also love the texture of well cooked Gnocchi. If you have experienced thick, tough gnocchi then you have probably eaten an extremely over cooked gnocchi. But if you can get your hands on some freshly made gnocchi and you have 3-4 minutes to watch it cook, removing it just as the gnocchi floats to the surface…then you should definitely have a go at making this.
This recipe is a nice quick and easy meal for a mum to whip up during the week. Remember when you are making meals that it’s okay to pick up things like pre-made gnocchi to make your life a little easier. 

No one would question you using your washing machine to making washing easier (no one is popping down to the river these days to beat their clothes on stones). So take a short cut here or there thanks to today’s conviences and make your dinner time run a little smoother. 


900g chicken breast
1 tablespoon olive oil
2 cloves of garlic, crushed
2 shallots, finely chopped
100g fresh shiitake mushrooms
1/2 cup white wine
1/4 cup sun dried tomato pesto
300mL lite cream
1/3 cup coarsely chopped basil
625g fresh gnocchi


Cut the chicken fillets into pieces. Heat oil in a large frying pan, cook chicken in batches until cooked through. Add garlic, shallots and mushrooms to the same pan, cook stirring for 2 minutes. 

Stir in wine, simmer uncovered until the liquid is almost evaporated. Stir in pesto and cream, bringing the mixture to the boil. Remove from the heat. Stir in the basil.

Meanwhile, cook the gnocchi in a large saucepan of boiling water until gnocchi are tender and float to the surface, drain. Toss everything together in a large frying pan. SERVE.
