900g chicken breast
1 tablespoon olive oil
2 cloves of garlic, crushed
2 shallots, finely chopped
100g fresh shiitake mushrooms
1/2 cup white wine
1/4 cup sun dried tomato pesto
300mL lite cream
1/3 cup coarsely chopped basil
625g fresh gnocchi
Cut the chicken fillets into pieces. Heat oil in a large frying pan, cook chicken in batches until cooked through. Add garlic, shallots and mushrooms to the same pan, cook stirring for 2 minutes.
Stir in wine, simmer uncovered until the liquid is almost evaporated. Stir in pesto and cream, bringing the mixture to the boil. Remove from the heat. Stir in the basil.

Meanwhile, cook the gnocchi in a large saucepan of boiling water until gnocchi are tender and float to the surface, drain. Toss everything together in a large frying pan. SERVE.
