Being a stay-at-home-mum is the greatest thing in the whole entire world. I know that there are some people out here who love going to work and I’m not judging your decision, I’m just saying I love being at home with my sons. The thing is, now that we are on a single income, I’ve been looking at where I can make some savings.
This has inspired me to write this mini blog series about cooking using ingredients from ALDI. Now I can admit that I am a bit of a brand snob and have had a long term love affair with products like oil and butter. But the fact of the matter is that I cook most things from scratch and if the product is Australian owned or grown then I am willing to give it a go!
Some people don’t pick up products from ALDI as they think that they don’t taste as good as the brand named items that they pick up at the general supermarkets… but let me tell you that tonight I used an ALDI brand pesto and it was just like any other store bought pesto I’ve tried {in saying that I always prefer the pestos that I make myself from scratch but this was a quick and easy option}.
I’ve also been super impressed by the price of salmon in ALDI. This was a great value meal and I would definitely cook it again.
ITALIAN INSPIRED FISH AND CHIP ONE POT WONDER
500 grams of potatoes
1 medium brown onion
1 bulb of fennel
100mls of sour cream
200mls of fish stock
4 pieces of salmon
1 tablespoon of olive oil
3 tablespoons of pesto
salt and pepper
Whisk together the sour cream and fish stock. Season with salt and pepper, before toss thinly sliced potatoes, onion and fennel in the mixture and lining a baking dish with it. Bake for 20 minutes in a 180 degree oven.
Top the potato bake with the salmon fillets, drizzle with olive oil and cook for 8 minutes or until the salmon is cooked to your liking. Finish with the pesto and the green tips from the fennel bulb.
