Recipe: apple and cinnamon pancakes

Now most mornings my breakfast’s aren’t very bloggable – but the other day was Shrove Tuesday or ‘Pancake Tuesday’, so I thought that I would whip up some apple and cinnamon pancakes for my fam bam to enjoy.  It’s the little things like keeping up family traditons like this one that are important to me.

The word shrove is a form of the English word shrive, which means to obtain absolution for one’s sins by way of Confession and doing penance. Thus Shrove Tuesday gets its name from the custom for Christians to be “shriven” before the start of Lent.

Although this means nothing to my children {22 months and 4 months} now – I hope that they will grow up to live in the Christian/Catholic faith and will carry out little traditons like this with their children.
APPLE AND CINNAMON PANCAKES
¾ cup milk
1½ tablespoons apple vinegar
1 green apple, grated
1 cup flour
3 tablespoons sugar
1 teaspoon cinnamon (if you really love cinnamon you can add another ½ teaspoon)
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
2 tablespoons coconut oil

Preheat a frying pan to medium-high heat.

Whisk together the milk and vinegar and allow to rest for 5 minutes. 
While milk is curdling, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk egg and oil into milk. Add wet ingredients to dry ingredients, then add the grated apple and stir until combined (don’t over-mix, it should still have some lumps).
Spray skillet with cooking spray. Use a ¼ cup measuring cup to pour batter onto skillet. Cook about 2 minutes until bubbles form and the edges start to look “dry”. 
Use a spatula to flip the pancake and cook another 1-2 minutes on the other side. Set pancakes aside and repeat with remaining batter.
