Recipe: The ultimate breakfast muffin

The other day I realised that I had purchased a few too many Chobani apple and cinnamon oats yoghurts {as my husband had skipped taking them to work for breakfast}. So I thought that I would whip up the ultimate breakfast muffin. I’d put into that muffin all of the things that I don’t normally get the chance to eat whilst I am running around looking after the boys.

If I had the chance, I’d love to squeeze myself a fresh orange juice each morning, follow it up with a bowl of muesli and some yoghurt, have a little fruit, maybe some eggs – all whilst reading the paper {or at least listening to the radio}.

So I placed all of those ingredients on the counter and I thought about what kind of muffin I could make. I flipped through a few magazines and saw that a few chefs were making yoghurt muffins so played around with the ingredients until I created the ‘ultimate breakfast muffin’.

THE ULTIMATE BREAKFAST MUFFIN
2 cups of self-raising flour
1 cup of muesli
1/2 cup of LSA
1/4 cup of sultanas
3 packets of Chobani apple and cinnamon yoghurt
1/4 cup of olive oil
1/4 cup of rice malt syrup
2 eggs
1 orange
1/4 cup of oats

Preheat the oven to 180 degrees. And then line a muffin tin with cases.

Place all of your dry ingredients {flour, muesli, LSA, sultanas} in a bowl. Mix in your yoghurt, olive oil, rice malt syrup, eggs, the juice of one orange, as well as all the zest from said orange. Spoon the mixture into the cases and then sprinkle with the oats.

Bake the muffins for 45 minutes or until cooked through.

    Yum, I love a good breakfast muffin! I love that these are sweetened with rice malt, one of my sweeteners of choice too when I’m baking 🙂
