Recipe: Ambrosia Salad

Have you heard of Ambrosia Salad? I didn’t know that was what it was actually called ‘Ambrosia Salad’ until I googled it. I just knew it as the dessert that my Aunt Anita always used to bring to our family gathering in the 80’s/90’s.

Ambrosia salad is actually a variation on the traditional fruit salad. Most ambrosia recipes contain fresh or sweetened pineapple, mandarin or fresh orange sections, miniature marshmallows, and coconut.

Other ingredients can include maraschino cherries, bananas, strawberries, peeled grapes {way too much time and effort}, or crushed pecans {but I am guessing any nuts were eliminated from our family version because it was what all the little kids wanted to eat}.

Although the name references the food of Greek gods, it is widely believed to be an American dish originated in the early 19th century. However, I’m guessing that it was featured in the Australian Woman’s Weekly back in the 70’s or 80’s because it sure did have a following here!

AMBROSIA SALAD
2 cups Greek yoghurt
1/2 cup pineapple pieces
1/2 cup of mandarin sections
1/2 cup of miniature marshmallows
1/4 cup of shredded coconut

Mix all of your ingredients in a bowl and then refrigerate overnight. SIMPLE!
