Recipe: Monday meal ideas – pork belly, get in my belly!

I love pork – practically any form of meat that comes from a pig is delicious! For special occasions, we love to put a whole pig on the spit and cook it over hot coals when we have family and friends around. But I have a soft spot for pork belly when few people crowd around our table {hopefully, I don’t end up with a few softer spots from its consumption}.

Two weeks ago, I drew some pork belly inspiration from BabyMac and whipped up her Slow Roast Pork Belly. I have to say that I pimped up my crackling, by adding some fennel seeds and some dried chili flakes when I rubbed it with salt and oil. The recipe was fantastic and everyone was impressed by the level of ‘crack’ that the crackling got.
