Recipe: Meal planning Monday – some more Christmas meal ideas

So once Christmas is said and done, you’re bound to have leftovers. I love myself a plate of leftovers – but some people don’t want to eat the same thing twice {and that’s often the people who haven’t gone to all the effort to prepare said leftover items – you know what I am saying!} So here are some ideas to change up those leftovers.

Leftover Christmas dinner – change that into the The Perfect Post Christmas Dinner Sandwich

Leftover pumpkin from your Christmas roast – why not have a go at whipping up a Pumpkin Pie

Leftover custard from your Christmas pudding or maybe just some fruit from a fruit platter – why not try an Apricot Bread & Butter Pudding

Leftover Christmas turkey – make up my delicious Italian pasta

The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
