Recipe: roast carrot salad

This is a great little side salad to go with your Christmas ham or turkey. It takes your roast carrots to another level – and let’s face it, who doesn’t love a delicious honey carrot?

I like to think less is more then it comes to Christmas sides – as you want to have a little bit of everything on the day {and not over stuff yourself before all of the delicious dessert options come out}.

I also like to think that you could do this salad on your BBQ, if you have a BBQ with a lid {in a throw away BBQ tray – minimise that washing up I say}. Pop all your Christmas lunch items in the BBQ – the ham, the turkey, a potato dish, these carrots, stuffing cups – and keep your house cool.

Recipe: roast carrot salad
Recipe Type: Side

Prep time: 5 mins
Cook time: 25 mins
Total time: 30 mins
Serves: 10 people
Ingredients
  • 3 bunches baby carrots
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon of honey
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of black sesame seeds
  • 1 bunch rocket, leaves picked, washed, dried
  • 60g (1/2 cup) walnut pieces, coarsely chopped
Instructions
  1. Preheat oven to 220°C. Line a large roasting pan with non-stick baking paper. Toss the carrots and oil in a bowl. Arrange the carrots, in a single layer, in the prepared pan.
  2. Roast for 20 minutes or until tender. Then add the walnuts to the pan and roast for another 5 minutes.Set aside for 10 minutes to cool slightly.
  3. Place the carrots and walnuts on top of the rocket in a bowl. Drizzle with the honey, any oil from the roasting pan and then sprinkle over the sesame seeds before serving.
