Life: What’s in my kitchen

And just like that it is February, we return to our regular routines and our holidays seem like a distant memory. I’m making a conscious effort to bring more ‘joy’ into my life this year – to not sweat the small stuff and give myself a few special treats every now and again. As a Mum, I’m busy looking after everyone else in the house hold and I’m often left until last. If the children, or even my husband, like the look of something on my plate – I will give it to them. But this month, I am keeping a special treat or two for myself!

In my February kitchen…

I have hidden a tub or Pat and Stick’s Butter Toasted Pecan Ice cream in the back of the freezer – for when everyone has fallen asleep and I can enjoy it in peace {without having to give up even a spoonful}. It is just too good to share. I might go as far to say that this is the best ice cream that I have ever eaten! The ice cream is perfectly soft and scoopable, even taken straight out of the freezer, and is full of the delicious butter toasted pecans. So buttery and crunchy and totally amazeballs.

In my February kitchen…

I’ve got baskets and baskets of plums, from our garden, which I will be turning into plum jam and plum cake and plum jelly. I look a full basket of plums around to my husband’s cousin’s wife. She is German and makes an amazing dessert using these plums. I am hoping that she will let me come around and learn how to make said amazing dessert, so that I can share it with you. And have it up my sleeve for next season when I am left with a glut of plums.

In my February kitchen…

I’ve got a few cans of organic coconut cream. Whilst we were on holidays with friends in Manyana – my friend’s Mum introduced me to the joy of slightly sweetened whipped coconut cream, and I have seriously been addicted ever since. All you need to do is chill your can of coconut cream in the fridge over night, then add a little icing sugar {or your sweetener of choice} and whip as you would normal cream. We have been adding this to our summer fruit salad each night. BEST EASY DESSERT!

In my February kitchen…

I have also hidden a tub of Maggie Beer’s Orange and Dark Chocolate Almond Ice Cream in my freezer, for eating when everyone else is asleep and I don’t have to share. For those of who aren’t regulars to the blog, I have a serious addiction to anything jaffa flavoured. However, I find that this combination of orange and chocolate can be polarizing.

I’m trying CoYo with passionfruit – a coconut yoghurt alternative because I am lactose intolerant and I have been devouring way too much dairy of late and it is carrying out havoc on my digestion system.

In my February kitchen…

I have this beautiful biodegradable bamboo fibre dish set called Biobu by EKOBO. This was one of the boy’s Christmas presents, but I am seriously thinking that I am going to purchase some more sets as after a month going through the dishwasher, they are my most favourite pieces of crockery for the boys. They are really ergonomical – aiding in allowing the boys to feed themselves without too much trouble and they wash beautifully in the dishwasher.

I’ve been eating this delicious vegan banana bread – it was going to be a paleo banana bread until I found that I actually didn’t have any eggs left. No matter – banana is a great substitute for eggs, so is a 1/4 cup of chickpea flour mixed with a 1/4 cup of water. I’ll be sharing my vegan banana bread recipe shortly on the blog.

In my February kitchen…

I have some beautiful linen from Mozi Australia. I love linen tablecloths and tea towels. I picked up some whilst I was in Sydney last month and using them just makes me feel happy! Heads up the my beautiful Martini Bikini Cotton Tablecloth {that has featured in some of my Instagrams shots} is now on sale {was $69.95 and is now reduced to $52.46}. It is really generously cut and will cover even an 8 seater table.

    Hi Shari, I used to hide my favourite ice cream too, I think it’s a mother thing. Yes you must keep some treats and time for yourself. You’ll be better or it

    me too me too. i love tea towels I do love jaffa flavours so this sounds delish. I am not a huge ice cream fan tho strangely unless it is really really great quality..

    Oh I love Mozi. I had to click on the link to that table cloth! Have told myself no though because I have to go to Pillow Talk to pick up a gift for someone in a sec sooo I will see what happens there. Sounds like ice cream is the food of choice (secretly) at the moment.

    There’s a whole lot of yum in your kitchen this month, especially the ice cream! I bought a spiraliser in January and am yet to take it out of the box. Maybe I’ll get zoodling in February! That banana bread looks delish – I’m off to check it out now! x

    It all looks so wonderful. I have been known to hide ice cream too. Your orange dark chocolate looks fantastic! Lately I am more likely to hide good dark chocolate and have it with a glass of red wine when the kids are in bed. Love the kids’ bowls. We are past that stage now as the youngest is five, they have been using regular dishes for a couple years now. Whipped coconut cream is indeed delicious!

    Oh my goodness! Sooo glad to see another InMyKitchen lady who adheres to the importance of keeping grrrrreat ice cream in the freezer. Your butter pecan variety brings back many happy childhood memories…Looks like you are creating lovely memories for your child, too. BTW Thank you for the tip about 1/4 cup chickpea flour + 1/4 cup water for egg substitute. Last and not least, brilliant photos!

    Oh my, the ice cream sounds SO good – orange and dark chocolate almond would disappear around here in one sitting. I can imagine dueling tablespoonspoons in action in my kitchen.

          Place it in empty wrapper or containers of items which they do not like – think maybe frozen peas or spinach?

      If you love coconut yoghurt then you should seriously try whipping your own coconut cream – so easy and so yummy.

    So much yumminess in your kitchen this month. I’ve been trying out coconut yoghurt lately too, the Nudie one is great. i don’t think I realised quite how much you love ice cream! That Pat & Sticks one looks the biz!

    I’m a tea towel tragic too. I can’t pass a good looking one up. I love Maggie Beer’s ice cream too but I’ve never been a Jaffa fan. Thanks heaps for joining In My Kitchen!

      I have so many tea towels – but I figure they always come in handy. In fact, we made some beautiful linen tea towels for my best friend’s hens day/night { https://goodfoodweek.com.au/2015/10/life-a-very-unhenny-1950s-affair/ }. I picked up some of Maggie’s affagato ice-cream to try out next!

The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
