When we moved from Canberra to Sydney, I wondered if I would be able to find a sourdough baker I loved as much as BreadNerds. And then I fell in love with St Malo bakery at the Ramsgate Foodies Market. Although I have not been able to get out to their actual bakery in Crows Nest yet {you know, because I’ve been super pregnant and all}, I have stalked them a lot on Instagram and I really want to try more from their range.
Why is it important that we understand where our food comes from?
It has become increasingly important for many of us to understand where our food comes from because we care about our bodies and we want to ensure that we are treating ourselves well. Our range of products takes this into account as we have sourced quality ingredients – as an example all of our sourdough loaves are made using 100% certified organic flour from the NSW based Wholegrain Milling Company. Furthermore, we understand that people have different dietary requirements and, as a result, we try as best possible to include in our range quality products which can be enjoyed by all – from vegan friendly floured organic sourdough loaves, gluten free loaves and sweets to a full healthy breakfast and lunch menu at our Crow’s Nest cafe.
What differentiates your product from that found in the supermarket?
We are passionate about the products that we make. We have spent time refining our recipes and we constantly try to source the best quality ingredients possible for all of our products, from our sourdough breads to our pastries, without forgetting our sweet treats. Our sourdough breads are made with 100% certified organic flour and are void of preservatives, chemicals, artificial flavours and added sugars.
Our range includes a variety of sourdough breads, all of which are created with care through a 36 hour handmade process. It takes time to make nice quality bread and we are happy to have an increasing following as we believe in the quality of our products.
Why are you passionate about sourdough?
St Malo bakery is essentially a sourdough bakery that is growing into a serious player in the wholesale market across Sydney. Earlier this year, St Malo entered a number of Sourdoughs into Sydney’s Fine Food Show and all of the entered Sourdough’s received awards – namely Light Rye Sourdough, Fruit Loaf and Multigrain Sourdough.

What draws you to sell your product at the markets?
Markets are a dynamic place which is perfect for selling our products. It allows us to reach out to families across Sydney, and it allows us to really communicate our passion with market-goers. We love participating in Sydney markets – presently you can find us at Bondi Junction Village Markets (Fridays 9-5pm), Wahroonga Organic Food Market (Saturdays 9-1pm), Ramsgate Organic Foodies Market (Saturdays 8-2pm), Canterbury Foodies and Farmer’s Market (Sundays 9-2pm), Frenchs Forest Organic Food Market (Sundays 8-1pm) and Marrickville Organic Food Market (Sundays 8.30-3pm)
What differentiates your bakery from others?
We are a small local bakery based in Crows Nest whose team is passionate about the St Malo vision. We believe in our product and we care about giving a positive experience to everyone we provide to. The St Malo product range is broad and caters for cafes, restaurants like the punjabi Redland Bay, hotels and bars. We supply to some of the best venues across Sydney and we are proud to do so. While having a range of products that cater for specific dietary requirements, we also have products such as the St Malo milk bun which has taken to the stage in Sydney’s current fascination with burgers. Big hitters such as Bar Luca and BL burgers use the bun. Bar Luca has recently taken out 1st prize in the Time Out Burger Challenge and is rated number 1 in Australia via the Fatties Burger Appreciation site.
Why is supporting local important to you?
We are a small local business ourselves; therefore, supporting other local businesses is only natural. We do this from supporting NSW based farms which supply the flour which is used in our sourdough breads (Wholegrain Milling Company) to the coffee which is served in our café (Single Origin Roasters). St Malo uses Sydney based meat and fruit and veg suppliers.
What is the most popular item on your menu?
If you’re visiting the Café you can’t go past the Kings and Queens breakfast. Or for the health conscious, you can’t fault the Quinoa Stuffed Portobello Mushroom. Focusing on our breads, we reckon we have on of Sydney’s best Fruit Loaves, with apricots and mixed raisins. It won an award at the Fine Food Show 2016 and it has proven to be a consistently popular seller for us. The Grain, Wholemeal, Rye and Olive and Rosemary sourdoughs are also big winners.
