Motherhood: Rudolph the Reindeer pikelets

It’s beginning to look a lot like Christmas – well, we are really at the pointy end of the whole thing. It’s the final countdown. And with most people running around like crazy chooks with their heads cut off, I’m trying to keep calm and take things a little slower. The other afternoon we sat down to make Rudolph the Reindeer pikelets…and they brought my two little boys such Christmas cheer {and thankfully the z man slept through it all}. 

Afternoon tea inspired by three of my favourite instagrammers/bloggers!

I saw @ourspicedkitchen make some delicious reindeer pikelets, so I whipped up some using @babymacbeth pikelets recipe because as @playwithfood_au says ‘afternoon tea is the second most important meal of the day’.

We topped our pikelets with either almond butter or avocado chocolate spread, then we used dark chocolate drops, pretzels and strawberries to make deer Rudolph the red nosed reindeer!

AVOCADO CHOCOLATE SPREAD
2 avocados
1/2 cup unsweetened cocoa powder
1/4 cup honey
1 tsp. vanilla bean paste
Halve and pit the avocados. Over a food processor, squeeze the halves so the flesh drops into the bowl. Add the cocoa powder, honey, and vanilla. Process for about 1 minute, stopping to scrape down the sides of the bowl as needed, or until smooth. Use immediately or store in the fridge for up to 1 week.
