It’s been raining a lot…but it’s not like cold and wet. It’s that gross sticky wet. Which means, it’s not like you want a really hot breakfast – like my almond milk porridge {although, now that I have seen it, I’m thinking of whipping myself up some for afternoon tea}…but these citrus and coconut waffles seem to hit the spot, they are my favorite. They are even good cold, for morning tea, with a little homemade nutella.
But back to the rain…OMG – how are you coping with all of this rain? It is driving me crazy – the little people just want to go to the park and burn off some of their energy and my washing is JUST NOT DRYING. Did I mention that the door came off my dryer – so I don’t even have the luxury of throwing my socks and undies into the dryer {why do little people seem to go through so many pairs of socks and undies?}.
I’ve been online trying to source another dryer door – so that I don’t have to fork out for a whole new machine. I’ve found a place called Statewide that specializes in supplying a wide range of spare parts for most major brands of clothes dryers including elements, belts, filters and even replacement doors. What I didn’t realise is how many model numbers each machine has? Does this seem like a scam to anyone else?
I can’t wait until the machine is just back up and running and I can focus on more important things – like organising the Z man’s baptism.
CITRUS AND COCONUT WAFFLES
1 cup wholemeal flour
1/4 cup desiccated coconut
1/4 cup coconut sugar
1 tsp baking powder
1 tbsp coconut oil
1 egg
1/2 cup of almond milk
the zest of an orange
To garnish: coconut flakes and mandarin pieces
Mix together all of the ingredients to make your batter and then pour batches into your waffle iron and cook until cooked through. This mixture should make 8 waffles. Top with coconut flakes and mandarin pieces.
