Life: what’s in my kitchen

I have birthday cakes – two to be exact. Mr Moo requested another dinosaur cake {I’ve made a green stegosaurus for his second birthday and a number three with dinosaurs climbing on top for his third}. This year’s inspiration was taken from his favourite dinosaur from ‘Dinosaur Train’. I made a gluten free Anne with blue buttercream icing for home and I made gluten free, dairy free Anne cupcakes for preschool with triceratops cake toppers. I’m not sure what type of cake I’ll whip up for my husband’s birthday – but I think I will outsource the baking of the cake for Z man’s baptism.

In my April kitchen…

I’m addicted to puff pastry and the chorizo from the Free Range Butcher… These pastry discs are simply topped with chorizo, mozzarella, cherry tomatoes, olives and basil and roasted for 20 minutes at 180 or until golden. Eaten for lunch, dinner or just because!

In my April kitchen…

I’ll be whipping up more vegetarian meals. One of the family favourites is these vegetarian enchiladas.

I’ve got a tub of lightly salted caramel macadamia gelista. Gelista is a unique artisan style, handmade gelato which is produced in small batches, using batch freezing technology ensuring a consistently creamy texture.

I’ve going crazy over mushrooms. I’ve been whipping up a simple mushroom sauce using all the different kinds of mushrooms that I can get my hands on, fried off lightly in a little butter, before adding a dash of white wine and a scoop of creme freiche. If you want some great quality wine. then check out lugana wine.

We are eating lots of Mexican! I don’t think the boys can ever get enough of corn on the cob or avocado. What are some of your children’s favourite foods?

The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
