It seems so crazy to me that American’s don’t think of eating pumpkin as a veggie – sure they make pumpkin pies {and I’ve even given it a go here} and they carve pumpkins, but pumpkin doesn’t normally appear on their table. And I think it’s a real shame as pumpkin is one of my favourite veggies. So today, I am going to give you some meal inspiration using pumpkin.
Pumpkin is so cheap at the moment – and it’s a great veggie for baby led weaning/pureeing.
At present, I’m eating a lot of pumpkin soup as I had been feeling awful and with a fever of almost 40 degrees, I thought I would head to the doctors to see if it was something more serious then ‘just a cold’. Apparently, I had been trying to soldier on with one of the worst cases of tonsillitis that she had ever seen and a middle ear infection.
So it’s pumpkin soup and bed rest for me – bahaha, totally joking on that bed rest front. Here is joking that everyone is kind to Mummy and is asleep by 8:30pm tonight, although when Daddy is away things never go to plan.
