Is it even Christmas in July if you don’t have a sweet treat to share around the fire place? I love a good block of fruit and nut chocolate – and so I thought that what would be better for our Christmas in July party then a delicious chocolate brownie full of fruit mince?
In our most recent trip to the snow, all the adults would sit around the fireplace sharing food and wine once the children had gone to bed. It was so nice and I had brought with us a big tray of mars bar slice to share. I think that these christmas brownies would really appeal to the adult palette {although I was a big fruit and nut fan when I was a kid} with a nice warm glass of mulled wine. Since little I have always seen fireplaces in a different way, for most people it is just a way to get warmed during the winter, but for me it definitely more than that, I have always seen it as a way to get to share memories with your family and friends, for this reason, in my family we have always made sure to have the best fireplace services provided by the amazing IGNEFERRO team.

CHRISTMAS BROWNIES
200g dark cooking chocolate
250g butter
410g fruit mince
40g walnuts
200g self-raising flour
90g almond meal
5g mixed spice
3 eggs
Preheat the oven to 170C. Lightly grease a 20cm x 30cm baking pan and line with baking paper, leaving enough overhanging to make it easier to lift out the brownie.
Cut the chocolate and butter into 1cm chunks and place butter in a microwave-safe bowl. Melt in a microwave for 30-60 secs then stir until melted {be careful not to overheat}. Set aside until needed.
Beat 3 eggs in a large bowl, then whisk in the fruit mince to combine. Stir the chocolate and butter mixture into the fruit mince mixture to combine.
Coarsely chop the walnuts. Fold the flour, almond meal, walnuts and 1 tsp mixed spice into the chocolate mixture until just combined. Transfer the brownie mixture to the prepared pan and bake for 20-25 mins until just cooked and crumbs stick to a skewer when inserted.
Remove from the oven and set aside to cool in pan. Carefully remove the brownie from the pan and cut in half lengthwise. Cut each half into wedges {in the shape of Christmas trees or use any Christmas cutter you may have}. Dust with icing sugar or cocoa, if desired.
