Life: What’s in my kitchen

Wow – February. I felt like I some how misplaced a week or two in January. It was Christmas and then suddenly here we are in February. How that happened, I do not know! I really wanted to have locked in a role for 2018, by the time February rolled around, but sadly, I have not. 

January was spent applying for multiple communications/public relations roles and meeting with recruiters to see if they would be able to place me in any government contract roles this year. I am keen to re-enter the full time work force and have all of my family in the same state again.

I tried to make the most of what could be my last few weeks, at home with the boys. We went to the beach as much as possible, spent a lot of time scootering and headed to my parents’ place to swim in their pool.

I am so excited about the leaps and bounds that the Little Dude has made in terms of swimming. He started swimming lessons last week and he was practically swimming on his own and even demonstrating how to do a ‘racing start’ dive – amazing, seeing as he refused to put his face in the water last term!

It’s also very exciting to have both older boys attending preschool this year. With Mr Moo attending 4yr preschool, 3 days a week and the Little Dude attending 3yr old preschool, 2 days a week. This means that I really need to be on my lunch box game!

Our preschool doesn’t accept anything with even traces of nuts. And cakes, sweet biscuits, chips, muesli bars, chocolate, chicken nuggets etc. are considered “sometimes foods” and are not suitable for
preschool. **COLLABORATION**

We have been smashing a cheese platter or two around here lately. I am so in love with the amazing selection of cheese and dips that Supabarn have at the moment – including this delicious walnut cheese that I am unable to find ANYWHERE else.

Our cheese platters always contain at least one cheese and one dip, along with a variety of biscuits or chips or veggies for carrying the cheese or dip, combined with a few pieces of fruit and some nuts.

There has been a post or two written about ‘how to create the perfect cheese platter’ – like this one from The Guardian – but I say ‘just don’t over think it!’

In my February kitchen…

Platters are the way of serving food – and so after a cheese platter we will often have a fruit platter! Each person gets to eat exactly what they want to eat. And I’m not jumping up and down every time someone says ‘I’m HUNGRY.’

I sometimes cut up the fruit early in the day and pop it into a tupperware container and then into the sliding draw of our fridge, where the boys are able to access it for themselves. Apples aren’t so great sliced early – but everything else seems to work.

The boys have also been snacking on these delicious Apricot and Coconut balls from Little Darling Food Co. They take me back to primary school, where we could purchase an apricot and coconut log for 5c.

I’m busy packing not one, but two lunch boxes … well, one lunch box on Wednesday and two on Thursday/Friday. The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
