Have you seen these delicious Mexican inspired bagels from BreadNerds at the EPIC Capital Farmers Markets, in Canberra. Yeah, I made a special trip down to Canberra just to grab a dozen! They are the traditional BreadNerds bagel topped with cheese and a jalapeno and they are delicious. I am normally a big fan of a sweet bagel. But this bagel made for a great lunch treat.
I took inspiration from a little Mexican snack that my family likes to share. It is simply, sour cream topped with fresh diced tomato, avocado, and spring onion – eaten with corn chips. I thought I’d jazz up the bagels with something similar {oh and a few extra jalapenos}.
I smeared my sour cream beside my bagel {because I thought that it would look better for instagram} – but you can just smear it straight on top of your halved bagel {fresh or toasted}.
QUICK MEXICAN BAGELS
2 breadnerds Mexican bagels
2 tbsps of sour cream
1 punnet of mixed cherry tomatoes
1 avocado
2 spring onions
1/4 bunch of coriander
2 tbsps of jalapenos
1 tbsp olive oil
salt
Simply smear you bagel with sour cream and top with a salsa made from quartered cherry tomatoes, diced avocado, spring onions, coriander and jalapenos tossed in olive oil and salt.
