I want to create beautiful memories of Christmas with my boys. I want them to get older and think of Christmas as a time of happiness and joy – spent with family. I want smells and tastes and sounds to remind them of Christmas.
The boys often ask for waffles or pancakes in the morning and I wanted to make these ‘Christmas Waffles’ special. So I thought about the ingredients that Jamie Oliver had been talking about in his Christmas special and I thought that vanilla and orange would be a nice little combo.
Although Jamie Oliver is always talking about clementines as his ‘taste’ of Christmas – and I am never actually sure what that fruit is. Is it a mandarin? We are so out of season with the cold climate Christmas. Look, I know that it is a citrus fruit – so let’s just run with that!
Recipe: Christmas Waffles
- 2 cups all-purpose flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1/4 cup white sugar
- 2 eggs
- 1 cup buttermilk
- 1/3 cup of coconut oil
- 1 tablespoon vanilla bean paste
- 1 orange, zested
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
In a separate bowl, beat the eggs. Stir in the buttermilk, coconut oil, orange zest and vanilla. Pour the milk mixture into the flour mixture; beat until blended .
Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
