So my second son keeps asking for mango – which isn’t in season at the moment. And I’ve been trying to explain to him about what’s in season and why we should eat produce when it is in season.
It didn’t stop him for asking for mangoes in our last grocery shop – so I picked up some mango in fruit juice, which low and behold he didn’t like.
Did you know that passionfruits are actually in season now? Tina McPherson, passionfruit grower and President of Passionfruit Australia says that it is not commonly known that passionfruit has a winter season and that they are a fantastic addition to hearty wintery meals.
I thought it would be good to add a vitamin C boost into our breakfasts – so whipped up these super easy tropical chia puddings (using up that rejected mango).
Recipe: Tropical Chia Pudding
- 2 bananas
- 4 passionfruits
- 1/4 cup of chia seeds
- 1 cup of coconut milk
- 1 tub of mango pieces
Blitz the bananas, mango and passionfuit until smooth. Mix in the coconut milk and the chia seeds and then pour into your serving dishes. Pop into the fridge and allow to set overnight.
Serve with a little whipped coconut cream, extra fresh banana and passionfruit pulp.
