Recipe: Cardamon, vanilla and blood orange oats

It’s been hectic around these parts lately. You know having a newborn and opening a new business in the same week is kinda crazy – not to mention when life throws you a curve ball in the form of the Z man having to see a heart specialist. Thankfully, we got the best news possible in terms of the little man’s heart…but it still knocked this Mama’s confidence around.

You have a baby and a piece of your heart lives outside of your body – and you just want that little person to be healthy and happy.

I have been known to get ‘HANGRY‘ {you know angry because you’re hungry}. In fact the other day, Mr Moo woke up and asked me ‘Mummy are you going to be grumpy today, because I don’t like it when you use your loud voice’. I almost replied with … ‘Well are you going to listen today, because I only yell when I have asked you nicely to do something four times first and I’m frustrated.’

But then I realised, I’m yelling because I am frustrated – but maybe the boys are frustrated with all the change and the fact that they miss their Daddy {you see he leaves at 5am in the morning and doesn’t get home until after 11pm – such is life with a new business}.

So, I have really been conscious of starting the day right with a big filling breakfast – and oats really helps me tick that box and avoid being hangry… Not much I can do about being frustrated {just need to count to 10 a few more times}.

GoodFoodWeek's cardamon, vanilla and blood orange oats

This is a delicious recipe for Cardamon, vanilla and blood orange oats – topped with pistachios, dark chocolate chips, black chia seeds and blood orange zest. Because I really love the flavour combination of cardamon, vanilla and blood orange {and dark chocolate chips make the world a better place – especially if you are trying to avoid being hangry/a grumpy Mummy}.

CARDAMON, VANILLA AND BLOOD ORANGE OATS

1 cup of oats
2 cups of almond milk
1 tsp of cardamon pods
1 tbsp of vanilla bean paste
2 blood oranges
Pistachios, dark chocolate chips, black chai seeds for topping your oats

Bring the almond milk to the boil with the cardamon pods, vanilla bean paste and the zest of one of the blood oranges. Once boiling, add the oats and stir until the oats are cooked {approximately 2-5 minutes depending on the oats you use}.

Remove the oats from the heat and mix in the juice from the blood oranges. Divide the oats between four bowls and then top with the pistachios, dark chocolate chips, black chia seeds and the remaining zest from a blood orange.

Poke bowl magic 🪄 The boys have been smashing Poke bowl magic 🪄 

The boys have been smashing these poke bowls - sushi rice topped with grated carrot, baby cucumbers, quick pickled red onion, edamame, salmon sashimi, mayo, teriyaki sauce, beneto flakes, seaweed, sesame seeds.

The salmon sashimi from @delishdeliveries was next level good this week - so soft it melted in your mouth.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
