Life: What’s In My Kitchen

Crickey joe! November already? I feel like we will blink and Christmas will be over. That’s why we have decided to embrace Christmas a little earlier this year. I am going to put up my Christmas tree in late November and we shall even attempt to get our Christmas photos with Santa in late November.

I feel like everyone gets a little crazy in December. People kinda forget the whole meaning of Christmas and there is almost like Christmas rage going on at the shops – so I’m bowing out early this year and we will just focus on making Christmas memories at home.

One of my favourite Christmas memories is swimming in my grandparents’ pool and eating all the summer stone fruits – so I’ll be picking up lots of cherries and nectarines as they come into season.

In my November kitchen…

We are powering through a box of mangoes a week. We are also enjoying pineapple, strawberries and cherries packed and stored nicely in ziploc freezer bags. The boys love a handful of cherries in their lunchbox. Some people might think they are an expensive treat, but I’d rather they be eating cherries than chocolate.

I was inspired to create my own spring rolls. These were super tasty and I will definitely share the recipe, because they were definitely worth making. The boys even took some of the leftovers for school the next day.

In my November kitchen…

My father-inlaw got me a Croatian cookbook, as we have been cooking a few of his recipes of late. My husband is learning how to make brudet. Brudet, brodet or brodeto is a fish stew made in Croatian regions of Dalmatia, Kvarner and Istria, as well as along the coast of Montenegro. All my boys love it (even the Little Dude, who thinks everything is ‘too spicy’) – so we want to keep the recipe going.

I’ve been cooking a few recipes from Every Night of the Week. This was a seriously good one – especially for Meatless Monday (which we are trying to stick to in our house). If you love food and whit then head on over and check her out.

In my November kitchen…

I’m trying my best to get through to the end of the year with lunchboxes…I feel like everyone is getting pickier – and they’ll eat something one week and then decide they don’t like it the next. Is this happening to anyone else?

And it’s not even like I am at the end of my school lunch box journey… Next year I up the ante and I’ll have two lunchboxes go five days a week and one lunchbox go three days a week. Fingers crossed for no lunchbox for daycare.

Family meals for my tribe of 6
Poke bowl magic 🪄 The boys have been smashing Poke bowl magic 🪄 

The boys have been smashing these poke bowls - sushi rice topped with grated carrot, baby cucumbers, quick pickled red onion, edamame, salmon sashimi, mayo, teriyaki sauce, beneto flakes, seaweed, sesame seeds.

The salmon sashimi from @delishdeliveries was next level good this week - so soft it melted in your mouth.

Sometimes you wonder if you’re giving everyone everything that they need - even if you’re running on empty.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉
Baked feta pasta from #tiktok fame... I did my re Baked feta pasta from #tiktok fame...

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!
Satay chicken bowls for the win! Rice noodles, ca Satay chicken bowls for the win!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
