Murray Valley Pork – and a recipe for a delicious Christmas salad

I’m been so lucky to do some nice things in relation to my blog this year, I’ve been to some events and I’ve been sent out the odd product or two – and I’ve had a blast trialing them! This week I was provided with some lovely cuts of pork from Murray Valley Pork to taste and blog about … don’t stop reading if you don’t like sponsored posts, because I also have included my own recipe!
Murray Valley Pork is a premium range of hand-selected pork, which is always tender, juicy and absolutely delicious. It’s the perfect choice to combine with flavours from around the globe. It’s perfect for your family meals, special occasions and barbecues.

I was sent out three cuts of pork to trail – a lovely rolled loin with the most amazing crackling, a collar butt and a pork roast with cranberry and almond stuffing.

I decided to give the pork roast with cranberry and almond stuffing a go first – it came with cooking instructions and I whipped it up with some lovely roast potatoes and a salad that screamed ‘Christmas’ (well to me at least).

The meat was juicy, tender and absolutely delicious. We loved the stuffing and thought it was beautifully flavoured and super easy for Christmas. My Mum even asked where she could find the pork in Sydney so that she could pick some up for Christmas … because nothing says ‘Christmas’ like a good range of pork products!

CHERRY FENNEL SALAD
1 bag of rocket
1 bulb of fennel
1 pear
20 cherries
¼ cup olive oil
2 tablespoons apple vinegar
1 tablespoon seeded mustard
salt and pepper

Wash the rocket and then place a layer on a nice serving plate. Top with thin slices of pear and fennel, along with the green sprouts of the fennel.

Halve the cherries and remove the seeds before adding to the salad. Whisk the oil, vinegar and mustard together, before seasoning with salt and pepper and drizzling over the salad.
