Recipe: Mexican spiced pork cutlet

Sometimes busy Mums can’t create their own spice mixes from stretch. Sometimes you just want something that you can get onto the table with minimum fuss and major impact…and it is times like these that I jump at a short cut or two.

Inside of creating my own spice mix for these Mexican pork cutlets – I am using the expertise of Old El Paso and jumping on the band wagon of using their taco seasoning…beacuase a friend once said ‘sometimes you don’t want fancy Mexican, you just want Old El Paso’.

MEXICAN SPICED PORK CUTLET
4 pork cutlets
1 packet of Old El Paso taco seasoning
500 grams of baby potatoes
1 red capscium
1 brown onion
4 pieces of corn
2 tablespoons of oil
1 tablespoon of butter
salt and pepper
Mixed lettuce for serving
Heat the oil in a large frying pan. Season the pork cutlets with the taco seasoning and place in the pan to brown. Slice the potatoes, capsicum and onion into similar sized pieces and sprinkle with any remaining seasoning. Add to the pan and allow to cook through.
In another pot, bring some salted water to the boil and then add your corn. Once the corn is tender, drain the water and then return the corn to the pot with a little butter and salt for seasoning.
Serve your pork upon a bed of seasoned lettuce with your grilled veggies and corn.
