Recipe: breakfast for mummy

Breast feeding Mummies need to start their day with a healthy and filling breakfast because you’re making breakfast, lunch and dinner (and all those feeds inbetween for your newborn). You want something quick and easy, that you can normally eat in one hand – even if you don’t have a toddler running around… So I came up with this delicious breakfast sandwich!

Toast is always a good option when you’re a mum – but why not think outside the square and put a few different things on your toast… I was inspried by the ad ‘Why stop at toast when you start with vegemite?’ – because I do love me some vegemite.

I love fruit toast and often I just top it with a little butter and team it with a hot cup of tea… However, when you have little ones you will realise that you often will not drink that cup of tea whilst it is hot – or even remotely lukewarm at times!
You can whip up this tasty breakfast sandwich using your humble toaster or using a sandwich press – it’s up to you. It all depends on what you have and what you find easiest in the morning with children in toe.

FRUIT TOASTED SANDWICH
2 slices of fruit toast
1 green apple
2 tablespoons of marscarpone
1 tablespoon of honey
1 teaspoon of cinnamon
Option #1
Toast your fruit toast until desired. Top with marscarpone on both slices, then place your apple slices on one side and the honey and cinnamon on the other side. Combine, slice in half and munch away as you tend to your child/ren.
Option #2
Top your fruit bread with marscarpone on both slices, then place your apple slices on one side and the honey and cinnamon on the other side. Combine and then place in a sandwich press – toast until desired, then slice in half and munch away as you tend to your child/ren.
