Life: Chasing the dream

It appears that these days, everyone has a food dream – whether you’re reading about them cooking via a blog, or you’re watching them cook up a storm on ‘My Kitchen Rules, or you’re watching them try to sell their recipe to the world via ‘Recipe to Riches’. Yesterday, I met up with a local Canberran trying to chase her food dream of creating a pie cookbook.

American born photographer Sarah Walker is attempting to raise funds for a pie themed cookbook through the crowd-sourcing website Kickstarter. This will be the first cookbook for Walker who has been crafting these recipes over the past few years after she found inspiration in the traditional Australian meat pie.

Walker is looking to bring a new wave of creativeness to the already successful dish and bring about a new trend in the food industry by turning classic American dishes, such as cheeseburgers, into a tempting pie.

We caught up to make said ‘cheeseburger pie’ and it appears that her recipes are not only extremely tasty, but also could be whipped up and frozen for a later date {which makes them perfect for Mums or anyone who is looking to pre-prepare meals for their working week}.

We whipped these four pies up in less then 20 minutes using Walker’s nifty pie makers {with my whiny children in toe – doesn’t that always seem to be the case when you have guests?}. She has allowed me to share the recipe we cooked {I’ve ad-libbed for the purpose of this blog}.
CHEESEBURGER PIES
250 grams of mince
1/2 onion
1/2 green capsicum
1/2 cup of diced ham
1 tomato
1/2 cup of grated cheese
1 tablespoon of mayonnaise
2 sheets of premade pastry
vegetable oil
Drizzle a little veggie oil in a frying pan and saute the onion and capsicum. Add in the diced ham and mince and brown. Remove from the heat, allowing to cool before adding the diced tomato.
Cut out the base and the lid of your pies from the pastry. Spread a little mayo on the base of your pie then fill with the meat filling and top with cheese before sealing with the lid.
Bake for 8 minutes in your pie maker – then release these golden morsels of goodness!
