Recipe: Lebanese BBQ chicken

Don’t you just love the smell of a good BBQ? Especially when you use the right campfire grill grate for you and can see the mouth-watering BBQ getting prepared. Some times as you’re driving home in the summer time you wish that that smell is coming from your backyard. Unfortunately, that smell is never coming from my backyard unless I am the who has organised it!

The other night I whipped up this delicious Lebanese mariande for some chicken thighs {because chicken thighs will always BBQ better then chicken breast – which will become dry and awful} – to have with the Fattoush salad that I am a little obessed with at the moment.
It just goes down so well because it is packed with lots of delicious veggies that everyone – including the hubby and the toddler enjoy… WINNING!
LEBANESE BBQ CHICKEN
6 chicken thighs
2 tablespoons of olive oil
3 cloves of garlic
2 tablespoons of chopped parsley
1 tablespoon of paprika
1 teaspoon of dried corriander
1 teaspoon of cumin
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of ceyanne pepper
1 teaspoon of salt
1/2 the juice of a lemon
Mix all of the marinade ingredients together in a bowl and the coat the chicken in the marinade. Refridgerate for 1hr {or atleast 20 minutes} before allowing the chicken to return to room temp and BBQing on a very hot grilled until cooked through.
 
Some times you just can’t go passed a good BBQ sausage – and then other times you’ll want this BBQ recipe. What’s you’re favourite meat to BBQ? Do you BBQ slices of potato? It’s delicious!

      The BBQ is a must have during the summer months {especially here in Canberra, so I’m thinking even more so in QLD}.
