Are you an MKR fan? Did you see Will and Steve whip up their Pork Belly with Apple, Fennel and Colcannon? It got me thinking that I would like to whip up a version of colcannon, because our family is such a big fan of blitva {garlicky hunks of potato mixed with wilted Swiss chard make up blitva – a quick Croatian side dish, and a great accompaniment to grilled fish}.
Come to think of it, most countires have a potato side dish that they love {because who doesn’t love potatoes?}. Think Indian – Bombay Potatoes… simple spiced potatoes are one of the most popular Indian side dishes.
And chips, you can practically eat chips with everything. Delicious deep fried potato strips are the perfect accompaniment for KFC’s mashed potato and gravy {I know, a terrible habit I picked up whilst I had braces and it was soft and easy to eat}.
Colcannon would have another awesome accompaniment for pork {you can find more of my favourite Autumnal side dishes to go with pork here}.
COLCANNON
1kg potatoes, peeled
50g butter, chopped
125ml thickened cream, warmed
2 green spring onions, thinly sliced
2 cloves of garlic, thinly sliced
1 head of mini savoy cabbage, shredded
1 cup chopped parsley
pink rock salt and cracked black pepper
Bring a pot of water to the boil and then simmer your potatoes until softened. Add the shredded cabbage and garlic to the pot and simmer for 5 minutes before draining everything and mashing. Add the butter, cream, spring onions and parsley and stir through. Season before serving.

We eat so much ‘blitfa’ – mashed potato and spinach, that I thought that mash potato and cabbage would have to go down pretty well and it did 🙂 Thanks for hosting the link up, as always xox
