Recipe: Monday meal ideas – one pot wonders

It has been bitterly cold in Canberra of late. Each day, when I open the blinds, I can see that someone two houses away has their fire going. I would love to have a fire place – however I don’t think that it would be very practical with two young boys {who are very adventurous}. So in an effort to keep my family warm from the inside out I have had some of my favourite ‘one-pot-wonders’ on high rotation.

I also love a good one-pot-wonder as the nights have become a little hectic around here. Mr Moo some times misses his nap and so can be falling alseep in his highchair if dinner is prompty on the table at 5:45pm, followed by a quick shower and bed. The Little Dude is also ready for bed around 7pm, so having the one-pot-wonder done and dusted early in the afternoon is a god-send some week nights.
One-pot-wonders can also be awesome for the budget as you can use cheaper cuts of meat – as the long, slow cooking will give you an amazingly tender and tasty result at the end.

The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
