I’m not really a morning person, nor I am I the person who likes to get up on a week day and cook a big breakfast {especially for my husband who is leaving at 5am in the morning}. But I’d really like to be a loving wife who cooked a big breakfast for my husband prior to him heading off to a hard days work – so I came up with this…
A delicious breakfast burrito {suitable for freezing} that only needs to be toasted prior to serving to one happy husband heading out in freezing temperatures. Can I get a #canbrrr ?

I whipped up eight of these the other afternoon, with two going straight into the fridge for the remainder of the working week and the other six going into the freezer for the following week.
You could easily double or triple this recipe and make enough for a fortnight’s worth or even a month’s worth. Just remember that when you freeze the burrito it will need time to defrost. I recommend taking it out of the freezer the morning before you want to eat it {and letting it defrost in the fridge}.
A FREEZABLE BREAKFAST BURRITO {makes 8 burritos}
8 tortillas
8 eggs
1/4 cup of milk
8 rashes of bacon
1 cup of shredded cheese
1 tin of crushed tomatoes
1/2 red capsicum
1/2 green capsicum
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon dried chili flakes
1/4 cup of water
Place the tomatoes, capsicum, cumin, coriander, dried chili and water into a saucepan and simmer for 20 minutes. Whilst the salsa is cooking, cook your bacon and then whisk your eggs and milk together before pouring into the same pan and cooking in your bacon fat.
Heat your tortillas {as per the packet’s instructions} and then assemble your breakfast burritos by layering; cheese, bacon, eggs and salsa on top of a tortilla and then rolling. Wrap your tortillas in aluminium foil before:
a) toasting in a sandwich press and eating straight away,
b) placing in the fridge to be toasted prior to eating,
c) placing in the freezer for later.

Awesome idea! I just had breakfast tacos for the first time the other day and I’m obsessed with them now – this looks perfect for a grab and go option though…especially on these cold mornings!

I love the idea of a breakfast burrito – what an eggcellent idea! I love a cooked breakfast but it’s something we usually only get to enjoy at the weekend… Although it could now be an every day occurrence with a breakfast burrito!
