As part of Eat.Drink.Blog 2016, Lumix Australia offered up an awesome little prize for a #mybrekkiebowl instagram competition. Whilst this wasn’t the most awesome instagram shot I’ve ever created – it was a pretty awesome brekkie bowl {containing grated apple, greek yoghurt, maple roasted oats and sultanas}. Not bad seeing as I had made it up using my toddler leftovers.
You see we go through a lot of apples and sultanas around here. Although they can be a hit one week and then a miss the following. Mr Moo is currently going through a phase where he wants to eat the apple whole – rather then me slicing it up {and if you peel the apple there will be tears}. So sometimes he will eat the whole apple and then other times I’m left with a half eaten apple {which isn’t that appealing for a mother to eat – but I hate wastage}.
I thought that I would grate up an apple that had a few bites taken out of it and put it with a half eaten packet of sultanas – waste not, want not!
And if you remember my post from earlier in the year when I made Muesli Bites { …it started out something like this… I was reading VeggieMama the other day and she said ‘For some reason, I’ve found myself drowning in boxes of muesli. Muesli I don’t remember buying, because it’s untoasted, and I’m frightened of untoasted muesli.’ And I thought, ‘OMG – so am I…So why is my cupboard full of the stuff too?’. So I thought that I would whip up some of her delicious simple muesli muffins and then create some special muesli bite treats {okay for toddlers and Mamas alike}.
Well, I also turned some of the oats from the muesli into maple toasted oats and I thought that I would share that recipe with you today.
MAPLE TOASTED OATS
2 cups of oats
1/4 cup of apple juice
2 tablespoons of maple syrup
1 vanilla bean pod, halved and seeds scrapped out
Place all your ingredients in a bowl and toss until the oats are evenly covered. Turn out onto a baking tray, pre-lined with a sheet of baking paper. Bake the oats for 20 minutes at 160 degrees or until nicely toasted. Store in an air tight container for 2 – 3 weeks. Serve with grated apple, greek yoghurt and sultanas.

Stopping over from kidgredients. I tend to just make smoothies with our leftovers and yep I too have many bitten apples around. My two year old loves helping out in the kitchen whilst standing on a ladder, so while I’m slicing and prepping he just helps himself to whatever fruit or veg. By the time I’m done he’s had quite a bit to eat. Yesterday he ate raw broccoli and a cherry tomato. A first!

Hi Tracey – thanks for stopping by. Smoothies are a great idea to use up leftovers {or the berries that are a little to mushie to eat}. I love eating raw broccoli – call me crazy. I often offer it to the kids to eat.
