Recipe: No-bake choc , cashew, coconut snack bars

I tell you what really appeals to me at the moment – a ‘no-bake’ recipe. Simple cooking is what I am all about – and if a little set of hands can help out, then that’s all the better. I’d been playing around with a few ‘no-bake’ recipes, but then I thought that I would try and match the flavour profile of Two Clean Kids choc banana bread topped with cashew butter and fresh strawberries {which I am still slightly obsessed with} and I had a winner.

NO-BAKE CHOC CASHEW COCONUT SNACK BARS

2 cups pitted dates
3/4 cup raw cashews
1/4 cup nut butter (I used natural cashew butter)
1/4 cup of coconut oil
1/2 cup unsweetened shredded coconut
1/4 cup of LSA
2 tbsps cocoa powder
1 tbsp of tahini
1 pinch salt

Toss everything into a food processor and process until the mixture starts to go smooth and clump into a ball. The dates will be all chopped up but you’ll still have bits of nut.

Turn the mixture out into an 8 or 9 inch square dish lined with parchment paper. Use your hands to firmly press the mixture into the bottom of the dish. Cover and refrigerate for 30 minutes.

Remove the bars from the pan and cut into pieces using a sharp knife. Enjoy these bars cold or frozen. Store in an air-tight container in the fridge or freezer.

    I NEED these in my life. I am often buying the Boost cashew protein balls. Now I can make my own!

      Oh man, my Mum and I were just talking the other day about how expensive the protein balls can be. If you’re a fan of protein balls then you definitely need to whip up some of these {as I mentioned above, they also freeze really well. I slice mine up and place layers of baking paper in-between to stop them from freezing together.}
