It’s been pretty intense around here lately. You know, who would have thought that it would be easy to start a new business with a newborn {oh and you know the other two little ones}? I need to be able to get more food into me – because the Z man isn’t putting on as much weight as the MACH nurse would like – so I am rolling out the muffins stat!
Muffins are simple to eat whilst feeding and also can be easily given to Mr Moo and the Little Dude when they are for more snacks. Cutting up all that fruit and veggies seems to take so much longer then I expect and because of that {and the messiness of eating a fresh mango}, I had let two mangoes go past their best…but that made them perfect for these muffins.
MANGO, BANANA AND COCONUT MUFFINS
2 cups wholemeal plain flour
2 teaspoons baking powder
1/2 cup coconut sugar
1 cup coconut, desiccated, plus extra to sprinkle
¾ cup (180ml) vegetable oil
2 eggs
1 cup thick natural yoghurt
1 teaspoon vanilla bean paste
2 large mangoes, diced
2 bananas
Preheat oven to 180°C. Line a muffin tray with 12 muffin paper cases.
Place flour, baking powder, coconut sugar and coconut into a large bowl and mix to combine making a well in the centre.
Place the oil, eggs, yoghurt, mashed banana and vanilla in a jug and whisk to combine. Pour the wet ingredients into the well of the dry and mix until just combined. Do not over mix. Add mango and gently fold to combine.
Pour the mixture into the muffin cases {I use a ¼ cup measurement for this, super fast, clean and easy} and top each muffin with a sprinkling of coconut. Pop into the oven and bake for 15 – 20 minutes or until cooked {test by pressing gently on the top of the muffin, if the muffin bounces back they are done}.
