Recipe: The perfect post Christmas dinner sandwich

When it is all said and done and you’re left with some turkey and all of the cleaning up – look towards this perfect post Christmas dinner sandwich to bring you some cheer. Taking all of the best elements from the day and slapping them on some fresh sourdough bread means you can have lunch or dinner on the table in no time. I feel sad if we don’t have any Christmas leftovers – but I also feel like there is a fine line between having a little leftovers and drowning in leftovers that no one wants to eat. I’m a sucker for Christmas ham on toast and don’t think you can ever get sick of that. You can find my perfect Christmas ham recipe here. THE PERFECT POST CHRISTMAS DINNER SANDWICH
1 loaf of sourdough bread
250 grams of camembert cheese
100 grams of cranberry sauce
400 grams of turkey breast
200 grams of salad leaves
Spread one slice of bread with cranberry sauce and top with some thin slices of camembert cheese (you might have had some on your nibbles plate – but if not maybe just purchase some to have in your fridge for this very sandwich).
Spread the other slice of bread with some avocado and then top with salad leaves and slices of turkey.
My husband added some leftover gravy to his sandwich to really make it sing – but I was happy to kept it plain (and our guests didn’t mind my version of the Christmas leftovers sandwich either).
