Recipe: Brown Rice, Cranberry and Pistachio Salad

If you follow me on Instagram, you will know that my family and I love frozen baby peas. And that we add them into our summer salads ALL THE TIME. Here is another great summer salad that uses one of the boys favourite grains – brown rice. I hope that you enjoy my recipe for Brown Rice, Cranberry and Pistachio Salad.

There is just something about the addition of the dried cranberries into this salad that takes it to another level. I’m not sure if it’s the sweetness or the fact that cranberries remind me of Christmas and so automatically put me in a good mood, but this salad is truly delicious.

I thought that I had made enough of this salad to be able to have leftovers for lunch the next day, but sadly, I was mistaken. I wonder if I just need to increase the amount of food that I make each night as the boys are getting older {heaven help me when the Z man starts eating solids or when we actually have 3 teenage boys}.

BROWN RICE, CRANBERRY AND PISTACHIO SALAD

1 cup of brown rice
1 cucumber
1/4 cup of cranberries
1/4 cup of pistachios
1/2 cup of frozen peas
1/2 bunch of mint
1/2 bunch of parsley
1/4 cup olive oil
1 tbsp of apple cider vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
salt and pepper to taste

Bring a medium sized saucepan to the boil and add the brown rice. Cook for 20 minutes or until tender. Drain and set aside.

Halve and then slice the cucumber. Add the cucumber, cranberries, pistachios, frozen peas, mint and parsley to the brown rice.

Whisk the olive oil, apple cider vinegar, lemon juice, and mustard together. Season and then drizzle over the salad. Toss again and then serve.
