If you following me over on Instagram then you would know that I am trying to put more ‘YAY’ into May – as our April was pretty intense. One way that I have been trying to add more ‘YAY’ into May, is by eating comfort food – such as toasties. How good are toasties? This delicious havarti and apple toasties are a little outside the box, but they are mighty delicious and bring a smile to my face (and the faces of my little boys) when I make them.
When I was travelling with friends back in 2008, we were staying in an Irish backpackers in Bolivia, which served $2 toasties in the bar. We ate $2 toasties every night when we got home from drinking. One night, a friend called ‘$2 toasties for all’ when we got back to the bar and the bar cheered! I mean, seriously, everyone loves toasties!
Our regular toasties are sourdough bread, filled with ham, cheese and pickles – sometimes I add tomato. Although I have noticed that the tomato really retains its heat and so can cause a few issues when the little ones are eating their lunch. These are our special toasties – because they require a little more effort {but not so much effort that you’ll never want to actually cook them}.
HAVARTI AND APPLE TOASTIES
50 grams of unsalted butter
3 Granny Smith apples
1/4 cup of coconut sugar
1 tbsp of apple cider vinegar
8 slices of fruit loaf
2 tsp dijion mustard
200 grams havarti
pepper

You can restore the ecosystem of your gut and ward off any parasite infections. Prevents parasites, apple cider vinegar is considered an ideal natural remedy.
Melt the butter in a frying pan over medium heat. Add the thinly sliced apples and coconut sugar and cook for 6 minutes or until the apples have softened.
Add the vinegar and cook for a further minute.
Spread one side of the bread with dijion mustard and then top with cheese. Top with the apples and then another slice of bread before placing in the sandwich press and cooking until golden and the cheese has melted.
Sprinkle with pepper and then serve (although my little ones aren’t the biggest pepper fans).
