Recipe: Vegan blood orange and cacao chia parfait

Everyone wants to start the day off right. In our household, breakfast is BIG. The boys love having toast and cereal and eggs and fruit. I was a little worried that I would have enough to fill them up with, if we cut eggs and dairy from our diet. Oh and bacon, I mean – eggs and bacon is the Little Dude’s favourite meal right now. 

The swap from milk to other milk substitutes wasn’t that big of a deal, because I was already lactose intolerant and so the boys were used to drinking some almond milk or coconut milk or soy milk. In fact, they really enjoyed our special treat swap of chocolate coconut water for chocolate milk.

Which is what gave me the idea to create some delicious vegan blood orange and cacao chia parfaits – perfect for breakfast or afternoon treat or dessert!

Delicious blood oranges from Redbelly citrus

VEGAN BLOOD ORANGE AND CACAO CHIA PARFAIT

1 cup chia seeds
2 cups coconut water
1 tablespoon organic maple syrup
1/4 cup cacao
1 cup blood orange juice

Place the chia seeds in a small bowl. Add the water, maple syrup, cacao, and blood orange juice, stirring to combine. Place in the refrigerator and let it set overnight. The next morning, remove from the refrigerator and check that the chia seeds have gelled.

Scoop out and place into individual bowls for serving. Top with a little blood orange zest, or dried blood orange slices or even a little drizzle of dark chocolate.

**This dessert is a little bitter, so might not be to every child’s taste. Although I loved the bitter jaffa combination, you may want to increase the sweetness.

When Mr Moo was a baby, I would go into New Acton to watch a movie at the Mums and Bubs session and you could get a slice of panettone and a coffee for $5... and it wasn’t even Christmas!

Crispy cos lettuce cups filled with BBQ’ed chicken strips, mango, avocado, radish, cucumber, spring onions, parsley, dill, lemon juice and olive oil.

And everyone gets to eat with their hands - so perfect for baby led weaning!

I’d also consume outside - but with all this smoke we’ve been trying to stay inside (and it’s driving everyone a little crazy 😜). Canberra definitely had more cool things to do inside (I guess cause of the extreme heat and the extreme cold)... hit me up with some good things to do inside in Sydney.

When we are hit with all the craziness of the end of the year, it's good to know that @raffertys_garden has my back. 
When we are out and about; catching up for Christmas drinks, watching Christmas concerts, having our Santa photo taken - it's good to know that my little one is having something healthy and nutritious from Rafferty's.

His favourite is definitely the barley, carrot and sweet potato - from the New Wholegrain Range. Proudly made in Australia, with Australian grown barley. It's good to know that this source of goodness is also supporting Aussie farmers.

I feel like in the month of December - more so than any other month - you need to be prepared for the impromptu entertainment platter... Nothing too fancy here, just some cheese, biscuits, nuts and fruits. I find it’s the variety that makes the board come alive.

I pick up a few extra things whilst I am grocery shopping - normally what’s on sale (so we don’t blow our budget).
