I’m always looking to experience new things – I’ve never really gotten into Halloween before, but this year the boys seem super interested. I shouldn’t be surprised, they sure do love dressing up. They love to be construction workers and super heroes and dinosaurs! Oh and there is the whole ‘collecting chocolate’ that definitely appeals to them.

Oh and if you’re looking to whip up something not full of chocolate for Halloween, then what about these pumpkin spiced pikelets? ?
PUMPKIN SPICED PIKELETS
1 1/4 cups all purpose flour
2 tbsps sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 salt
1 cup soy milk
6 tbsps pumpkin purée
2 tbsps melted butter
1 egg
Whisk together flour, sugar, baking powder, spices and salt. In a separate bowl, whisk together milk, pumpkin, butter and egg. Fold the wet mixture into the dry ingredients.
Grease a frying pan and heat over medium heat. And batter in 1/4 cup measures, cook until it bubbles and then flip and cook until cooked though.
